History ~
19th century. Used for many centuries in French kitchens the Confit Pot was originally used to preserve duck and goose. Confit is from the French word “confire” which means “to preserve” and before refrigeration, they were an essential part of daily life in the kitchen. Originally the meat would have been salted and cooked in its own fat, giving it a protective layer and then it was stored in a confit pot, which was placed in earth to aid the preservation process.
Condition ~
Very good antique condition for a confit pot of this type, no cracks or losses.
